Ingredients:

2 pounds of beef, lamb or pork

1 onion, sliced

4 cloves of garlic, minced

3-4 dried chili peppers, soaked in water for at least 30 minutes

1 tablespoon of Sichuan peppercorns

1 tablespoon of ginger, grated

Salt and pepper to taste

Soy sauce and vinegar for seasoning

Instructions:

1. Cut the meat into bite-sized pieces and set aside.

2. In a large pot or wok, heat up some oil over high heat. Add in the onion and garlic and stir-fry until fragrant.

3. Add in the meat and continue to stir-fry until it's browned on all sides.

4. Add in the dried chili peppers, Sichuan peppercorns, and ginger and stir-fry for another minute or two.

5. Add in some water or broth and bring it to a boil. Reduce the heat to low and let it simmer for about an hour or until the meat is tender.

6. Season with salt, pepper, soy sauce, and vinegar to taste. You can also add in other ingredients such as mushrooms, leafy greens, or tofu at this point.

7. Serve hot over a bed of rice noodles or udon noodles. Enjoy!

Tips:

Make sure to soak the dried chili peppers in water for at least 30 minutes before using them to release their flavors.

If you don't have access to Sichuan peppercorns, you can use ground black pepper instead. However, it won't have the same numbing effect as the original spice.

You can adjust the amount of spices and ingredients according to your preference. For example, if you prefer a milder flavor, you can use fewer chili peppers or less soy sauce.
