Tomato Soup Recipe: A Hearty and Flavorful Dish

2 cups chopped onions

Instructions:

1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onions and garlic and sauté until softened, about 5 minutes.

2. Add the chopped tomatoes, broth, basil leaves, salt, and pepper to the pot. Stir to combine and bring to a boil. Reduce the heat to low and let simmer for 20-30 minutes, stirring occasionally.

3. Use an immersion blender or transfer the soup to a blender and puree until smooth. Return the soup to the pot and continue to simmer until heated through.

4. Serve hot with your favorite toppings, such as croutons, shredded cheese, fresh herbs, etc. Enjoy!

Tips:

You can use any type of canned tomatoes you like in this recipe, including diced tomatoes or crushed tomatoes. However, whole peeled tomatoes tend to have more texture and flavor than other types.

If you prefer a thicker soup, you can add some cornstarch or flour to help thicken it up. Just mix a small amount of cornstarch or flour with a little water in a bowl and stir it into the soup before serving.

This recipe can be easily doubled or tripled to serve more people. Simply increase the ingredient quantities accordingly and adjust the cooking time accordingly.
