Dumplings, also known as jiaozi, are a popular traditional Chinese food that is enjoyed during the Chinese New Year and other special occasions. They are made by wrapping a filling of meat or vegetables in a thin layer of dough and then steaming, boiling, or frying them. Here is an overview of how to make dumplings from scratch.

Ingredients:

Dumpling wrappers (also called wonton skins)

Water

Flour

Salt

Meat or vegetable filling (such as pork, cabbage, shrimp, or mushrooms)

Soy sauce

Sesame oil

Green onions (optional)

Instructions:

1. Make the dumpling wrappers: In a large mixing bowl, combine water, flour, and salt. Mix well until the dough forms a ball. Cover the bowl with a damp towel and let it rest for at least 30 minutes.

2. Roll out the dough: Divide the dough into small pieces and roll out each piece into a thin circle. Place the circle on a flat surface and use a fork to poke holes in the center.

3. Add the filling: Spoon about 1 tablespoon of meat or vegetable filling onto each dumpling wrapper. Be careful not to overfill them.

4. Fold the dumpling: Dip your finger in water and run it along the edges of one side of the wrapper. Then fold the wrapper in half over the filling, pressing down gently to seal the edges. Repeat this process with the remaining wrappers and filling.

5. Cook the dumplings: Fill a large pot with water and bring it to a boil. Add the dumplings to the pot and cook for about 5-7 minutes, or until they float to the surface. Drain the dumplings and serve them hot with soy sauce, sesame oil, and green onions (if desired).

Tips:

If you don't have dumpling wrappers, you can make them from scratch using flour and water. Just follow the same instructions as above, except substitute self-made wrappers for store-bought ones.

To prevent the dumplings from sticking together while cooking, sprinkle a little bit of flour on top of the pot before adding the dumplings.
