Spicy Hot Pot Recipe

Ingredients:

Beef, lamb, chicken, tofu skin, potatoes, tofu skin, mushroom, water chestnut, bamboo shoot, and other ingredients (choose according to personal preference)

Sichuan peppercorn powder, chili bean paste, red chili flakes, ginger, garlic, scallions, and cooking wine

Oil for frying

Instructions:

1. Cut all the meat into small pieces and rinse them with clean water.

2. Cut the potatoes and tofu skin into appropriate-sized chunks. Slice the mushrooms, bamboo shoots, and water chestnuts accordingly.

3. Heat up some oil in a pot and stir-fry the Sichuan peppercorn powder and chili bean paste until fragrant. Then add in the ginger and garlic and continue to stir-fry until fragrant.

4. Add in the cooking wine and bring it to a boil before adding in the meat. Cook until the meat is fully cooked before moving on to the next step.

5. Add in the vegetables and continue to cook until they are tender.

6. Finally, add in the seasonings such as salt and chicken broth to taste.

Tips:

You can adjust the level of spicy and numbing based on your personal preference by adding more or less chili bean paste or Sichuan peppercorn powder.

If you don't like spicy food, you can reduce the amount of chili bean paste or not add it at all.

Pay attention to the cooking time to avoid overcooking the vegetables or meat.

To make the dish more flavorful, you can also add in some other seasonings such as soy sauce or oyster sauce.
