Spicy Hot Pot is a popular Sichuan-style cuisine that features a communal pot of
broth flavored with chili peppers, garlic, ginger, and other aromatic ingredients. The
flavors and spices used in the broth can vary depending on the region and the
personal preferences of the chef. However, there are some common ingredients and
steps involved in making a basic spicy hot pot base that you can use to create your
own unique recipe.
Ingredients:
200g dried shrimp
1 tablespoon Sichuan peppercorns
2 cloves garlic, minced
1 inch piece of ginger, grated
1 tablespoon vegetable oil
2 tablespoons soy sauce
1/4 cup water
Salt and pepper to taste
Steps:
1. Soak the dried shrimp in cold water for at least 30 minutes until they are fully soaked and softened. Drain and set aside.
2. Heat the vegetable oil in a pan over medium heat. Add the Sichuan peppercorns, garlic, and ginger and stir-fry for about 1 minute until fragrant.
3. Add the soaked dried shrimp to the pan and stir-fry for another 2-3 minutes, until they are cooked through and lightly toasted.
4. Add the soy sauce, water, salt, and pepper to the pan and stir-fry for another 1-2 minutes until everything is well combined and heated through.
5. Remove from heat and let cool slightly before serving. The spicy hot pot base is now ready to be used as the foundation for your homemade spicy hot pot. You can add any other ingredients you like such as meats, seafood, vegetables, or noodles to make your own unique creation. Enjoy!
